Ingredients:
4 sticks of celery
2 onions
garlic - I use 3-4 cloves
the recipe writes 2 tin of tomatoes (15oz size) I usually use tomato paste (1 tube) or 1 box of passata
6 oz of red lentils (it's much tastier if I wash them first)
2 pints of vegetable stock
salt and pepper
lemon juice (optional)
3 tablespoons of oil
Fry the celery, onion and garlic approximately 7 minutes until soft
Add lentils and fry about 2 minutes until they're covered in oil
Add veggie stock and tomatoes
Season with salt and pepper
Simmer about 30 minutes until lentils are cooked and softened
Puree the soup with blender
Add lemon juice and herbs if desired (parsley etc)
Can be frozen if you make bigger batches
I usually cook this less watery, almost like a curry and serve it with rice and veggie or bean patties, quorn products, sausages etc.
