A delecious falafel wrap to celebrate becoming a vegetarian


Ingredients:

1 400g can chickpeas, drained
1 medium onion, finely chopped
1 tablespoon minced garlic
2 tablespoons fresh parsley, finely chopped
1 teaspoon coriander
3/4 teaspoon cumin
1/2 teaspoon salt
2 tablespoons flour (I used gram flour)
oil for frying


Combine chickpeas, garlic, onion, coriander, cumin, salt and pepper (to taste) in medium bowl. Add flour and combine well.

Mash chickpeas, making sure to mix ingredients together to make a thick paste. You can use a food processor but I only had a hand blender and it did the job (but wasn't the easiest part of the preperation and made me wonder how on earth they did it before blenders and food processors :)

Form the mixture into small balls, about the size of a ping pong ball. Slightly flatten.

Fry in 2 inches of oil at 350 degrees until golden brown (2-5 minutes).

I served it, as you can see, in a tortilla wrap, that I still don't know how to fold properly even after thorough youtube and "how to" web page investigations :) but my boyfriend gobbled it all up and had a very happy bunny face so I think it didn't turn out too bad! I spread hummus on the wrap and placed two or three falafels in the centre and sprinkled them with grated carrots, spinach, rocket and watercress and rolled it up in the clumsy way as portrayed in the picture.
