Ingredients:
2 onions chopped
1 tbsp olive oil
2 garlic cloves crushed
2 x 400g can tomatoes (I usually use a tube of tomato paste diluted with water)
500g frozen spinach thawed or 1kg fresh spinach cooked, drained and chopped
350g vegetarian cream cheese spread
125g quick cook lasagne sheets
salt and pepper
Fry the onions 5 minutes + garlic 5 minutes.
Put 3 tbsp of onion mixture with tomatoes + salt and pepper.
Put rest of onions with cream cheese + salt and pepper + spinach.
Put a layer of spinach mixture into buttered bowl.
A layer of lasagne sheets.
A layer of tomato mixture.
Repeat layers ending with sauce.
Sprinkle with breadcrumbs and dot with butter or margarine.
Bake in pre-heated oven 50-60 minutes.
